Recipe: Cornmeal Griddle Cakes

The following recipe is taken from my tattered and well-worn Better Homes and Gardens cookbook
CORN-MEAL GRIDDLE CAKES
1 cup boiling water
3/4 cup yellow corn meal
1 cup buttermilk or sour milk (to make sour milk, add 1 Tbsp vinegar or lemon juice to 1 cup milk - let sit for 10 minutes or so)
2 eggs
1 cup all-purpose flour
3 tsp. baking powder
1 tsp salt
1/4 tsp. baking soda
1/4 cup salad oil
Pour water over cornmeal; stir till thick. Add milk; beat in eggs. Sift flour, baking powder, salt, and soda; add to cornmeal mixture. Stir in salad oil. drop enough batter to make size of pancake you wish onto ungreased griddle pan. Makes approximately 14 pancakes.
