Recipe: Country French Chicken Meatloaf (using diced apple and lemon with applesauce topping)

2 Tbsp butter
1 cup minced onion
2 diced, unpeeled Golden Delicious apples
2 cloves garlic, minced
1/2 tsp dried tarragon
1/4 tsp dried savory
2/3 cup fresh bread crumbs
2 eggs, lightly beaten
1 Tbsp grated lemon rind
2 green onions, chopped
1 tsp salt
1/2 tsp pepper
1 1/2 pounds ground chicken
1/2 cup applesauce
2 Tbsp dry bread crumbs
1 Tbsp firmly packed brown sugar
In large skillet, melt butter over med heat; cook onion, apples and garlic, stirring occasionally, for 10 minutes, or until golden. Add tarragon and savory, cook 1 minute. Let cool 10 minutes.
In large bowl, combine apple mixture and next 6 ingredients, gently mix in chicken. Lightly pack into greased 9 x 5-inch loaf pan, smoothing top. Spread top of loaf with applesauce.
Combine crumbs and sugar, sprinkle evenly over top.
Bake at 350 degrees F for about 1 1/4 hours, until cooked through, then broil 3 minutes, about 6 inches from heat. Let stand 10 minutes before slicing.
