HOMEMADE UNDERWOOD CHICKEN SPREAD
(clone/copycat recipe)

I first bought Underwood Chicken spread when it was on clearance for 50 a can. We really liked it and it made a great emergency protein supply for our little stockpile. I just recently found it again at Walmart for $1.50 a can, but it had a coupon for 50 off so I bought a few to get some more with the coupon. Still pricey, though!

Today I was picking extra meat off chicken bones I had used to make chicken broth (I can my own.) I was going to give it all to the dog (she ended up getting just the fat instead, lol) but as I was working I thought, "This really smells like Underwood Chicken Spread!" I added a few more things (I read on the can) and what came out looks and tastes identical to me!

So, I do not have an exact recipe, because it was done "on the fly" by taste, but I will list what I used and how I did it:

Bones w/ meat bits & fat left over from 6-8 chicken breasts
Approx. 2 tbsp onion powder
Approx. 2 tbsp garlic powder
Approx 1 tsp celery seed (NOT celery salt!)
Approx. 2 tsp ground black pepper
2-4 gallons water

Simmer about 8-12 hours to make broth.
Strain broth from chicken bones/pieces (save broth for canning!)
Refrigerate until cool.
Pick through chicken bits to CAREFULLY remove small bones & fat/skin & discard (reserve chicken).

In a large bowl combine with a fork:
Chicken pieces (was approx. 2 cups for me)
Approx. 1/4 to1/2 tsp turmeric
Salt (or Accent Flavor Enhancer) to taste (I added both until I got the right feel/taste on my palate. The Accent gives the "feel" of salt without letting things get too salty.)
Pepper to taste
Approx. 1/8 cup broth from chicken
Approx. 1/4 to 1/2 cup instant potato flakes (The flakes act as binder and absorbs broth, so chicken spread doesn't taste watery. I just add as needed a little at a time & kept tasting it. This is listed on the can as an ingredient!)

This yielded about 2 cups or nearly 6 cans worth.

I paid 99 per lb for bone-in chicken on sale. I got the chicken meat and broth for other things and this spread came from leftovers that would normally have been discarded, so it was basically free! I split it into 5 ounce portions and vacuum sealed it and put them in the fridge.

If you don't want to make a lot of broth and want a higher yield, it MAY work to simmer a few raw chicken breasts (along with the bones that came with it) cut up in just a few cups of water with 1/2 or 1/4 of the spices for a few hours (so it breaks down easily), strain off the broth & bones, cool, shred the meat (or use a food processor) and then add the final ingredients. I suspect the bones add unique flavor and that Underwood actually uses mechanically separated chicken that was cooked with the bones, too.
