SWEET AND SOUR MEATBALLS
2 cans (8 1/4 oz each) pineapple chunks, reserve juice
3/4 cup packed brown sugar
1/4 cup cornstarch
3/4 cup cider vinegar
1/3 cup soy sauce
1/2 pound ground beef
1/2 pound lean ground pork
1 egg, slightly beaten
3 tablespoons soy sauce
1/4 cup fine dry breadcrumbs
1 green pepper, thinly sliced
TO SERVE:
hot cooked rice (or substitute)
chow mein noodles
Drain pineapple, reserving juice. Set aside pineapple. Add enough water to juice to make 1 1/3 cups liquid.
Combine liquid, brown sugar, cornstarch, vinegar and 1/3 cup soy sauce. Microwave at high for 7 1/2 to 11 minutes, or until mixture is thick and glossy, stirring twice with whisk. Set aside.
In medium mixing bowl, combine beef, pork, egg, 3 tablespoons soy sauce and bread crumbs. Mix well. Shape into 20 meatballs. Place meatballs and green peppers in 2 quart Oval Casserole in oven on Micro Go Round. Microwave at high for 6 to 8 minutes, or until meat is no longer pink. Drain.
Add pineapple chunks and sauce to meatballs. Microwave at high for 4 to 6 minutes, or until hot, stirring once.
Serve over rice and with chow mein noodles.
