For all you Spanish food lovers out there, here is my Cousin Carol's Quickie Fabada, short for Fabada Asturiana which is a famous soup from Asturias, Spain. The original version takes hours to make. This is a quickie version sort of like the Italian Pasta Fazool...
COUSIN CAROL'S QUICKIE FABADA
(ASTURIAN SPANISH SOUP)
1 small onion, diced
1 garlic clove, minced
1 small chorizo, chopped chunky
1/4 cup of ham (approx. 2-3 deli slices), diced
2 tbsp. olive oil
2 cans (19 oz. each) Navy Beans or Cannellini Beans, drained
1 can chicken broth (low salt)
1/2 cup collared greens, chopped (fresh or frozen)
Saute onion, garlic, chorizo and ham in olive oil (2 Tbsp.)
Add beans and chicken broth. Simmer on medium-low for approx. 15 minutes.
Add collared greens, simmer for additional 10 minutes.
Enoy!
