Recipe: Crab Cake

These are from a restaurant called The Carved Angel over here in Britain.....
they are pretty good...hope you like them!!
Joyce Molyneux's Crab Cakes
at the Carved Angel
225g/8 oz prepared crab meat half brown and half white
1 egg beaten
1 tbsp mayonnaise or soured cream
2 tsp grainy Dijon mustard
1 spring onion, chopped
chopped fresh coriander/cilantro
freshly grated rind of 1 lime
juice of 1/2 lime
crushed dried red chillies for seasoning
50g/13/4 oz soft white breadcrumbs
olive oil for shallow frying
salt and freshly ground black pepper
Mix together the crab meat, egg, mayonnaise, mustard, spring onion, coriander, lime rind and juice.
Season generously with salt, pepper and crushed red chillies and set aside for an hour.
Don't worry if the mix is wet - it doesn't matter.
Shape the mixture into eight equal sized round cakes and coat with the breadcrumbs.
In a frying pan, heat enough olive oil to shallow fry, then cook for about 8 minutes, turning once, until golden brown on both sides.
Serve at once.
