Recipe: Greek Manicotti with Beef

GREEK MANICOTTI WITH BEEF

1 (8 ounce) package (14) uncooked dried manicotti pasta tubes
1 pound lean ground beef
1 medium (1/2 cup) onion, chopped
1 (10 ounce) package frozen chopped spinach, thawed, well drained leaves
2 teaspoons chopped fresh mint
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground cinnamon
1 egg
1 cup (6 ounces) crumbled Feta cheese, divided use
1 (30-ounce) jar prepared meatless spaghetti sauce, divided use

Heat oven to 350 degrees F.

Cook pasta according to package directions. Rinse with hot water; drain. Separate pasta tubes; set aside.

Meanwhile, in 10-inch skillet cook ground beef and onion, stirring occasionally, until browned (5 to 7 minutes); drain off fat.

Stir spinach, mint, salt, pepper and cinnamon into beef in skillet. Cook over medium heat, stirring occasionally, until heated through (2 to 3 minutes). Remove from heat.

In small bowl beat egg slightly; stir in 1/2 cup Feta cheese. Stir into meat mixture.

Reserve 1 cup spaghetti sauce. Pour remaining sauce into 13x9x2-inch baking pan.

Fill pasta tubes with meat mixture; place in prepared pan. Pour reserved 1 cup spaghetti sauce over pasta tubes.

Bake for 30 to 35 minutes or until heated through. Sprinkle with remaining Feta cheese.
