CRANBERRY PUMPKIN COOKIES
2 1/2 cups all purpose flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 Tbs pumpkin spice mix
1/2 cup butter, softened
1 cup white sugar
1/4 cup brown sugar, packed (light or dark)
1 tsp pure vanilla extract
1 egg
1 cup solid pack pumpkin puree
1 cup fresh cranberries, chopped
1 Tbs orange zest, only the orange part not the white (don't leave this out)
1/2 cup chopped walnuts or pecans
Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a bowl, mix together the flour, baking powder, baking soda, salt and pumpkin pie spice; set aside.
Chop cranberries and nuts; set aside.
In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in vanilla, egg and pumpkin. Add flour mixture until well blended. Stir in cranberries and orange zest. Fold in nuts. Drop by teaspoonfuls onto cookie sheets.
Bake for 10-12 minutes. Let sit in pan for a few minutes then place cookies on wire rack to cool.
