Hello,

Here are a few ideas for you. Cream cheese is a great base for just about any flavoring. If you have favorites you're trying to duplicate, let us know and we'll try to help.

Ellen's Boursin

8 oz Cream cheese
2 Garlic cloves, peeled
1 tb Fresh basil
1 tb Fresh dill
1 tb Fresh chives
6 Black olives, pitted

The author writes: "Boursin is generally served as an appetizer spread on crackers, or stuffed into cherry tomatoes, but sometimes we make roast beef sandwiches with a layer of boursin as a base." Blend cream cheese, garlic and herbs in a food processor until smooth. Chop in olives. Transfer to a small bowl and keep refrigerated until ready to serve.

Flavored Cream Cheeses

1/2 lb cream cheese, at room temperature

whip/blend in the following:

1 Tbsp confectioners or powdered sugar and any of the following:
2 Tbsp fresh lemon juice and 1 Tbsp grated lemon rind
or
4 Tbsp strawberries
or
1/2 cup peeled peaches

OR
(don't add the sugar to these)

1 oz lox
or
3 Tbsp brown sugar and 1 tsp. cinnamon (optionally add 1/4 cup raisins after blending)
or
1 hot red pepper, seeded, and 2 Tbsp chives
or
1/2 tsp. fresh rosemary, 1 Tbsp chopped green onion, and 1/2 tsp.paprika

Chili Spiced Cream Cheese from Canyon Cafe

I asked my server and was told it was simply a mix of picante sauce and cream cheese. Nothing tricky, just blend the two.

Diabetic Cinnamon Spread for Bagels

8 oz. fat-free cream cheese, softened
1 tsp. cinnamon
1/2 cup chopped golden raisins

Combine all ingredients in a small bowl. Refrigerate in a covered container, and use with whole wheat bagels. This may be served immediately or kept in the refrigerator for 1 week. Makes 8 (1/4-cup) servings.

Exchange (per serving): 50 calories, 1/2 skim milk, 0 g fat, 84 mg sodium, 1 mg cholesterol.
