LEMON-LIME BARS
FOR THE CRUST:
1 cup flour
1/3 cup confectioners' sugar
1/2 teaspoon McCormick Ground Ginger
1/4 teaspoon salt
1/2 cup (1 stick) cold butter, cut into chunks
FOR THE LEMON-LIME FILLING:
1 1/4 cups granulated sugar
2 tablespoons flour
1/2 teaspoon baking powder
1/2 cup fresh lime juice
Preheat oven to 350 degrees F.
TO PREPARE THE CRUST:
Mix flour, confectioners' sugar, ginger and salt in large bowl. Cut in butter with pastry blender or 2 knives until mixture resemble coarse crumbs. Pat mixture into greased foil-lined 9-inch square baking pan.
Bake 15 to 18 minutes or until crust is lightly browned. Remove from oven.
TO PREPARE THE FILLING:
Mix granulated sugar, flour and baking powder in large bowl. Add lime juice, eggs, lemon extract and food color; whisk until blended.
Pour filling over warm baked crust.
Bake 20 to 25 minutes longer or until filling is set. Cool in pan on wire rack. Cut into bars.
Makes 16 servings
