Recipe: Cream of pumpkin soup

Hi Rosie, i'm not sure what kind of pumpkin soup you had but you can try this recipe if you want. It's for those kind of creamy pumpkin soup. I think you should use the small kind of pumpkin, not the jack o lantern type coz i read somewhere that that one is not as good. I don't have the exact amount but it's the method that counts right? ;-P I tried this recipe before but it was a few years ago.

Fry some pumpkin flesh and oinions in a bit of butter for a short while. Pour chicken stock or water (but the former makes it tastier) and boil until the pumkin is soft. Puree it in the blender or the food processor. Pour back into the pot and let it boil. Add salt and pepper.

If the soup is not the thick consistency that you want, stir in a little flour (dissolved in some water) until it reaches the consistency that you like. If you want it to be rich, add some cream into it as well.
