Recipe: Old Fashioned Split Pea Soup (Carnation, 1974)

OLD FASHIONED SPLIT PEA SOUP

1/4 pound finely diced salt pork or bacon
1 cup chopped onion
1 1/4 cups green split peas
1 teaspoon salt
1/4 teaspoon pepper
1 quart water
1 bay leaf
1 2/3 cups undiluted Carnation Evaporated Milk

Fry salt pork or bacon in 4-quart saucepan over low heat to golden brown.

Add onion. Continue cooking about 5 minutes longer.

Add peas, salt, pepper, water and bay leaf. Continue cooking over low heat until peas are broken up and mixture is smooth (1 to 1 1/2 hours), stirring occasionally.

Just before serving remove bay leaf. Slowly add Carnation. Heat to serving temperature.
