Creamed Garlic Spinach Casserole with Chicken

Honestly I LOVED creamed spinach before lo carbing, and this just really is a homey comfort meal after work sitting around watching TV. Of course adjust recipe to add anything you'd like, use more chicken less spinach if your worried about the carbs in spinach, if garlic isn't your thing season with your favorite mixture. Your friends who think your crazy for giving up carbs will LOVE this dish and think "How could anyone eat this and loose weight, and feel healthy"

2 lbs sliced chicken breast
1 package (10oz) Fresh Spinach (or frozen if you'd like)
4 Tablespoons of Heavy Cream
4 Tablespoons of Butter
4 Cloves Garlic
1/2 cup Freshly Shredded Cheese (Motz or Munster work really well mixed in with some Parmesan or Romano)
Dash Garlic Powder (to taste)
Dash Onion Powder (to taste)
Small Pinch of Nutmeg
Dash Salt
Dash Pepper

Season chicken in salt and pepper before cooking (at least I always believe it makes a difference) Cook chicken breasts strips in a hot pan until golden brown and fully cooked (few minutes per side should be plenty depending on side of chicken). You can also grill a whole breast of chicken and slice it up later if you'd like, season it anyway you'd like. Using precooked chicken slices is also acceptable.

While cooking chicken, steam the fresh spinach, or drain the frozen spinach. Steam till wilted but not totally cooked down.

Take chicken out of the pan, lower heat, add butter to pan and melt. Add garlic and brown (but not burn). Add cream. Add garlic powder, nutmeg, onion powder. Simmer till hot (doesn't have to cook long since you don't have a lot of liquid to work with)

Add spinach and chicken to pan and turn off heat. Sauteed and cover with sauce. If you need to add more sauce, feel free (equal parts butter and cream). Make sure everything is well coated.

Preheat oven to 350.

Put mixture into a casserole dish (or use the pan itself if it's oven safe). Top with shredded cheese.

Bake in oven for 10 minutes (just to get the cheese melted, even a little brown if you'd like).
