Recipe(tried): Creamy chicken and mushrooms

For dinner tonight we are having 'Creamy chicken and mushrooms' and, as this is one of my favourites, I thought I'd share it with you all. We serve it with basmati [or jasmine]rice, boiled with 2 tablespoons lemon juice and 2 level tablespoons vegeta, the latter, is made in Croatia, and is available from continental food shops. We have also served it with hot cooked noodles which is equally as nice. Enjoy. Angel O:-)

Creamy chicken and mushrooms

Ingredients
2 tablespoons butter
4 chicken breast fillets, skin removed and diced
1 1/2 cups sliced mushrooms
1 medium onion, sliced
1 clove of garlic, chopped finely -or-
1/8 teaspoon garlic powder
1 can cream of mushroom soup [10 3/4 oz size]
1/2 cup milk
1/8 teaspoon pepper

In large skillet, over medium-heat, heat 1 tablespoon butter. Add chicken, cook 10 minutes or until browned. Remove.

Reduce heat to medium. In remaining butter, cook mushrooms and onions with garlic until onion is tender and liquid had evaporated, stirring often.

Stir in soup, milk and pepper, heat to boiling.

Return chicken to skillet. Cover, cook over low heat 5 minutes or until chicken is no longer pink, stirring often.

Serve on a bed of rice or noodles.
