Recipe(tried): Creole Pork (slow cooker)

I found this recipe, which I have tweaked into a slow cooker version, in an Australian Women's weekly cookbook I picked up at a garage sale some time ago. This edition is called "Caribbean Cooking". I thought it looked like something my DH would like; turns out to be a version of a favourite of his from when his mum used to cook for him!

Creole Pork:

2 medium eggplants
coarse cooking salt
2 TBs olive oil
1 kg (2.2 pounds) pork roast, cut into cubes
1 large onion, sliced finely
2-4 cloves garlic
1/2 large tin diced tomatoes, drained
1 or 2 fresh green chiles, chopped finely
pepper
1/4 c. chicken stock

Method:

Brown pork cubes in olive oil. Add onion, to soften. Add eggplant, sprinkle with coarse salt, give it a good stir, then add everything else and bring up to the boil.

Load the whole kit 'n caboodle into the slow cooker, and cooker on low for 4-6 hours.

Serve with rice to soak up the yummy sauce!
