Recipe: Make Believe Rumaki - 4 versions (using dates, water chestnuts and bacon)
Appetizers and SnacksI'm fairly sure the first recipe is what you're looking for, but if not, perhaps the rest will help you devise a similar one.
MAKE BELIEVE RUMAKI
20 large dates, pitted
10 water chestnuts, sliced in half (optional)
5 slices Cheddar cheese, each cut into 4 pieces
5 slices bacon, each cut into 4 pieces
1/2 cup teriyaki sauce
Sliced tomatoes and cucumbers (optional)
Slice dates but do not cut all the way through. Insert into each date, 1 slice each water chestnut, if used, and cheese. Wrap each date with a piece of bacon. Secure with a toothpick. Dip dates into teriyaki sauce. Place on lightly oiled baked sheet.
Bake at 450 degrees F or under broiler for 10 to 15 minutes or until bacon is crisp. Serve immediately with sliced tomatoes and cucumbers, if desired.
TERIYAKI GLAZED DATE RUMAKI
1 can whole water chestnuts
1 box dates, pitted or not
1 lb thinly sliced bacon
1 cup teriyaki sauce
Drain water chestnuts and slice in half, place in a small bowl, add teriyaki sauce, toss to cover. Set aside.
Preheat oven to broil.
Slice open dates (do not cut in half). Cut bacon strips in thirds. Place a chestnut half in each date and wrap with bacon. Secure with a toothpick. Repeat until all dates are stuffed and wrapped. Brush all with teriyaki sauce. Place on broiler pan.
Broil in oven for 3 to 5 minutes or until bacon is cooked, turning as necessary. Serve immediately.
BACON-WRAPPED DATES STUFFED WITH CHEESE AND WATER CHESTNUTS
10 Medjool dates, pitted
10 1-inch pieces of blue cheese, asiago, manchego, pecorino, or goat cheese.
5 whole water chestnuts, cut in half
5 (8-inch) strips of bacon, cut in half
Open the sides of the dates and fill each with a half slice of water chestnut and a piece of cheese. Wrap each date in a 4-inch piece of bacon and secure with a toothpick. Place on a shallow pan.
Place into oven (high roast, 600 degrees F) for 5 minutes then turn the dates over and cook for 5 more minutes or until the bacon is done. Remove from the oven and allow to cool for 10 minutes before serving.
DATE RUMAKI
24 Pitted Medjool Dates
8oz. Cream Cheese
12 Slices of Bacon
Teriyaki Sauce
Stuff each pitted, split date with cream cheese. Wrap with 1/2 slice of bacon. Secure with wooden toothpick. Marinate stuffed, wrapped dates in teriyaki sauce for 1/2 hour.
Bake on a sheet pan at 450 degrees F until bacon is done, about ten minutes. Drain on paper towels and serve warm.
