CRISPY FRIED NOODLES
(HOMEMADE CHOW MEIN NOODLES)
1 (4 oz.) package fine noodles
1 1/2 quarts boiling water
1 1/2 tablespoons salt
Drop noodles in boiling salted water and boil for 5 minutes, stirring occasionally. Drain in colander. Rinse with hot water. Drain well.
Spread noodles on slightly greased baking sheet and dry in a slow oven (300-325 degrees F) for 30-35 minutes until noodles are dry but not hard. Stir after 15 minutes. (Noodles can be dried a day in advance of frying, if desired.)
Sprinkle noodles, a few at a time, into deep fat, heated to 365 degrees F, and fry until delicately browned and crisp, about 1 minute. Lift out and drain on absorbent paper. Sprinkle lightly with salt.
Serve with chow mein, creamed dried beef, chicken, fish, etc.
Makes 5-6 servings
