Breakfast and BrunchHi Christine :-) Here are several ideas for you that have been posted previously here at recipelink. If you do a search for "breakfast casseroles," you will find more. Most breakfast casseroles are "make ahead" so you can put them in the oven in the morning. Good luck, Christine! Enjoy your little ones:-) I'm sure you've been told many times they grow up fast!!
Make Ahead Breakfast Recipes (11)
Crock Pot Oatmeal
2 c. milk
1/4 c. brown sugar
1 tbsp. melted butter
1/4 tsp. salt
1/2 tsp. cinnamon
1 c. rolled oats (not quick or instant)
1 c. chopped apple
1/2 c. raisins
1/2 c. chopped walnuts
Grease the inside of a slow cooker crockpot. Put ingredients into crockpot and mix with whisk. Cover. Just before going to bed, turn on the crockpot, at "low" speed. The cereal will be ready for morning. Serve with milk.

This is not exactly a recipe, but guidelines. I make scrambled eggs, cooked bacon or sausage, crumbled OR chopped ham, grated cheese, hash brown potatoes (I use the southern style or diced boiled potatoes, browned), onion, green pepper, and salsa. I usually make these ona morning that I have already made the eggs and potatoes and make extras and make up the burritos and wrap in plastic wrap then foil or into freezer bags. To heat, I pop in teh microwave for 1:30 on high. They are delicious! You can add whatever your family enjoys.
