Recipe(tried): Carrot Cake or Bars (using baby food carrots)

Here is a carrot bar recipe that can be made into a carrot cake also.

CARROT CAKE OR BARS

FOR THE CAKE:
4 eggs
2 cups sugar
1 1/2 cups Crisco oil
3 small jars baby food carrots (may substitute 2 cups pumpkin or squash)
1/2 cup chopped nuts (optional)
2 tsp cinnamon
3 tsp soda
2 1/2 cups flour
1 tsp salt
FOR THE FROSTING:
3 1/2 cups powdered sugar
1 (8 oz) package cream cheese, softened
1/2 cup butter or margarine
1/2 tsp vanilla
Mix with electric mixer until well blended and smooth.

Preheat oven to 350 degrees F. Grease and flour a 9x13-inch baking pan for cake or 2 (9x13-inch) baking pans for bars.

Combine ingredients for the cake in order given in large mixing bowl; mix together. Pour in prepared baking pan(s).

Bake at 350 degrees F for 30-40 minutes for bars or 40-45 minutes for cake. Place cake in pan on rack to cool.

TO MAKE THE FROSTING:
Mix all ingredients for the frosting together with an electric mixer until well blended and smooth. Use to frost cooled cake or bars.
