Crockpot Italian Chicken

2 pounds chicken pieces
1 large jar spaghetti sauce
dried oregano, garlic salt, onion powder

Put chicken pieces in crockpot; add spaghetti sauce; add spices, to taste. Cover and cook on LOW for 8-10 hours. Carefully remove chicken from crockpot to a serving platter (it's tender and will fall apart easily). Spoon leftover liquid into a bowl; serve with chicken.

Lamb Shanks and Beans
Serving Size : 6

2 stalks celery -- sliced
4 lamb shank
2 medium onions -- chopped
2 cans chicken broth
1/4 teaspoon dry rosemary
1 bay leaf
1 cup carrots -- shredded
1 can navy beans -- rinsed and drained

In crockpot, stir together all but carrots and beans. Cook on high 4-6 hours, low for 10-12 hours, or until lamb is fork tender. Just before serving, stir in carrots and beans. Cover and continue cooking 6-8 minutes until heated through. Ladle into bowls.

Melt In Your Mouth Sausages

Serves 8

2 pounds italian sausage (sweet, mild or hot) -- links or coil
48 ounces spaghetti sauce
1 can tomato paste (6 oz)
1 large green pepper, sliced thin
1 large onion, sliced thin
1 tablespoon grated parmesan cheese
1 teaspoon parsley flakes
1 cup water

Place sausage in skillet; cover with water. Simmer 10 minutes and drain. Meanwhile place remaining ingredients in slow cooker; add drained sausage (if using coil, cut into links). Cover and cook on low for 4 hours. Increase temp to high and cook 1 hour more. Serve in buns, or cut sausage into bite size slices and serve over spaghetti.

Slow Cooker Chicken Stroganoff

4 skinless boneless chicken breast halves -- cubed
1/8 cup margarine
1 pack dry Italian salad dressing mix
8 ounces cream cheese
1 can condensed cream of chicken soup

Put chicken, margarine and dressing mix in slow cooker; mix together and cook on low for 5 to 6 hours. Add cream cheese and soup, mix together and cook on high for another 1/2 hour or until heated through and warm. Serves 4.

Christy's Pepperoni Pasta Sauce

1 jar Burgundy wine pasta sauce
1 jar roasted garlic tomato pasta sauce
2 small jars roasted garlic tomato paste
2 small jars roasted garlic tomato sauce
3 tablespoons crushed red pepper
2 tablespoons dried parsley
2 teaspoons roast garlic pepper
1 package sliced pepperoni (or 1/2 log fresh cut)

Puree pasta sauces with seasonings and tomato sauce. (Can use favorite flavors of pasta sauce instead). Place in crockpot with cut pepperoni and mix well. Cook on low for 4-6 hours. Excellent over spiral pasta. Garnish with grated Parmesan. The longer it sits, the hotter it gets. Good with garlic bread and fresh salad.

Cream Cheese Chicken

1 frying chicken, cut up
2 tablespoons melted butter
2 tablespoons dry Italian salad dressing
1 can condensed mushroom soup
6 ounces cream cheese, cubed
1/2 cup sherry
1 tablespoon chopped onion

Brush chicken with butter and sprinkle with salt and pepper. Place in a crockpot and sprinkle dry mix over all. Cover and cook on low for 6 to 7 hours. About 45 minutes before done, mix soup, cream cheese, wine, and onion in a small saucepan. Cook until smooth. Pour over the chicken and cover and cook another 45 minutes. Serve with sauce. Can top with shredded cheddar and parmesan during last 45 minutes of cooking as well.

Creamy Ham And Potatoes

Serving Size : 4

4 medium red potatoes -- thinly sliced
2 medium onions -- finely chopped
1 1/2 cups cubed fully cooked ham
2 tablespoons butter or margarine
2 tablespoons all-purpose flour
1 teaspoon ground mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1 10 3/4 ounce condensed cream of celery soup -- undiluted
1 1/3 cups water
1 cup shredded cheddar cheese -- optional (4 ounces)

In a slow cooker, layer potatoes, onions and ham. In a saucepan, melt butter. Stir in flour, mustard, salt and pepper until smooth. Combine soup and water; gradually stir into flour mixture. Bring to a boil: cook and stir for 2 minutes or until thickened and bubbly. Pour over ham. Cover and cook on low for 8-9 hours or until potatoes are tender. If desired, sprinkle with cheese before serving. Yield: 4 servings.

Crockpot BBQ Beef for Sandwiches

2 pounds boneless stew meat
1 teaspoon garlic powder
1 bottle barbecue sauce
2 teaspoons sugar
2 teaspoons liquid smoke flavoring
1/2 teaspoon salt
1/4 teaspoon pepper

Place stew meat in crock pot. Combine remaining ingredients & pour over stew meat. More BBQ sauce may be added if needed. Cook on low for 8 to 10 hours or high for 4 to 6 hours or until stew meat is tender. Stir the meat with a for to shred. Mix well in sauce. Serve on hamburger buns or bread.
