Recipe: Chocolate Coconut Macaroons

CHOCOLATE COCONUT MACAROONS

1 1/2 cups coconut
1/3 cup white granulated sugar
3 tbsp unsweetened cocoa powder
2 tbsp unbleached all-purpose flour
1/8 tsp salt
1 tbsp corn syrup
1 tsp vanilla
2 egg whites

Preheat oven to 325 degrees F.

In a mixing bowl, combine coconut, sugar, cocoa powder, flour, and salt.

In another mixing bowl, combine corn syrup, and vanilla. Mix wet ingredients with dry ingredients just until moistened.

Using a small 1 1/2-inch diameter ice cream scoop, place 15 small mounds of coconut mixure 1 1/2-inches apart onto a prepared, foil-lined baking sheet.

Bake for 18 minutes or until set.

Makes 15 cookies
