Recipe: Crunchy Seasoned Oven Fries (Crunchy Chili Fries with Creamy Salsa Dip or Crunchy Italian Fries with Marinara-Cheese Dip)

1 egg
3/4 cup cornflake crumbs
Chili Fries Seasoning or Italian Fries Seasoning (recipes follow)
1 1/3 pounds (4 medium) potatoes, cut into 1/2-inch thick wedges
Creamy Salsa Dip or Marinara Cheese Dip (recipes follow)
Heat oven to 375 degrees F. Coat two baking sheets with vegetable cooking spray.
Lightly beat egg in shallow bowl.
In another shallow bowl, mix crumbs and seasoning blend of your choice (either Chili Fries Seasoning or Italian Fries Seasoning).
Dip potato wedges into egg; coat completely with crumb mixture. Arrange in a single layer on baking sheets. Bake 20 minutes, then turn potatoes over and continue to bake 10 to 15 minutes longer, until potatoes are browned and crisp and insides are tender when tested with pick.
Serve immediately, plain, with ketchup or with corresponding dips (recipes below).
CHILI FRIES SEASONING:
Combine 1 1/2 tablespoons chili powder and 1 1/2 teaspoons garlic salt.
ITALIAN FRIES SEASONING:
Combine 6 tablespoons grated Parmesan cheese and 1 1/2 teaspoons Italian herb seasoning.
CREAMY SALSA DIP (TO ACCOMPANY CRUNCHY CHILI FRIES):
Mix 1/3rd cup light sour cream with 3 tablespoons prepared tomato salsa. Makes about 1/2 cup
MARINARA-CHEESE DIP (TO ACCOMPANY CRUNCHY ITALIAN FRIES):
Mix 6 tablespoons marinara sauce with 2 tablespoons grated Parmesan cheese. Heat in microwave oven. Makes about 1/2 cup.
