CARROT-POTATO KUGEL
2 cups grated pared potatoes
1 cup grated pared carrots
1/3 cup grated onion
1 tsp salt
1/8 tsp pepper
1/2 cup unsifted flour
3 tbsp cooking oil
2 eggs, beaten
Preheat oven to 350 degrees F. Grease an 8-inch square baking pan.
Combine potatoes, carrots, onion, salt, pepper, flour, and oil in mixing bowl. Mix thoroughly. Stir in eggs; mix well. Spread mixture in prepared baking pan.
Bake at 350 degrees F 40 minutes or until toothpick inserted in center comes out clean.
Cut in squares. Serve hot.
