CURRIED CHICKEN SALAD
1/4 cup plain low-fat yogurt
2 tablespoons plus 2 tsp mayonnaise
1/4 teaspoon curry powder
1/8 teaspoon ground ginger
1/8 teaspoon salt
6 ounces cooked chicken or turkey, cubed
1/4 cup canned crushed pineapple, drained
2 tablespoons finely minced onions
2 tablespoons finely minced green pepper
1 tablespoon raisins
In a medium bowl, combine yogurt, mayonnaise, curry powder, ginger, and salt.
Add chicken and remaining ingredients; mix well. Chill for several hours to blend flavors.
