Recipe(tried): Curried Coleslaw with Peanuts and Bacon

I have made this several times and it is delicious! Its a nice change from the same old.

CURRIED COLESLAW WITH PEANUTS AND BACON

1/2 cup mayonnaise
1 Tbsp. sugar
1 tsp.curry powder
1 tsp. salt
2 Tbsp. cider vinegar
1 bag shredded coleslaw mix (green & purple cabbage & carrots)
4 bacon slices, cooked crisp and crumbled
1/2 cup chopped salted peanuts

Combine mayo, sugar, curry powder, and salt in a small bowl. Whisk in vinegar. Pour dressing over the cabbage in a large bowl, add bacon and peanuts, and toss evenly to distribute the goodies. Serve.
Serves 6
TIP: If you dont plan on serving right away wait to add the bacon and peanuts until right before you serve so it will be nice and crunchy.
