Recipe: Chicken Salad Chinese Style (using rice, topped with chow mein noodles)

CHICKEN SALAD CHINESE STYLE

1/4 cup soy sauce
2 teaspoons prepared mustard
1 tablespoon vegetable oil
2 1/2 cups cooked chicken, cut in thin strips
3 cups cool cooked rice
1 cup sliced green onions with tops
FOR SERVING:
1 small head lettuce, shredded
Mayonnaise
1 (3 ounce) can chow mein noodles

Blend soy sauce, mustard, and oil. Add chicken and toss lightly. Allow to stand about 1 hour.

Stir in rice and green onions. Adjust seasonings, if necessary. Chill.

Spoon onto beds of lettuce. Top with mayonnaise and sprinkle with generous amounts of chow mein noodles.

Makes 6 servings
