Recipe: Deep-Dish Cheesecake Coffee Cake (using biscuit mix)

DEEP-DISH CHEESECAKE COFFEE CAKE

FOR THE COFFEE CAKE:
3 cups Bisquick baking mix
1/4 cup sugar
1/4 cup butter or margarine, melted
1/2 cup milk
FOR THE CHEESE FILLING:
1/2 cup sugar
1/2 teaspoon vanilla
2 eggs
1 (8 ounce) pkg cream cheese, softened
FOR TOPPING:
1/4 cup preserves (strawberry, apricot or raspberry)

Preheat oven to 375 degrees F.

Mix baking mix, sugar, margarine and milk; beat vigorously 30 seconds. Turn dough onto surface, well dusted with Bisquick. Knead 30 times. Pat dough down evenly in bottom and up sides of ungreased 9x1 1/2-inch round pan.

Beat all ingredients for the cheese filling together with hand beater until smooth. Pour over dough.

Bake until edge is golden brown and filling is set, about 30 minutes. Cool 10 minutes.

Spread with preserves. Serve warm.
