Recipe: German Apple Cake with Cream Cheese Frosting

GERMAN APPLE CAKE WITH CREAM CHEESE FROSTING

FOR THE CAKE:
4 cups apple slices (apples peeled and sliced thin)
2 cups sugar
1/2 cup oil
1 cup walnuts, chopped
2 eggs, beaten
2 tsp. vanilla
2 cups flour, sifted
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
FOR THE CREAM CHEESE FROSTING:
1 3/4 cups powdered sugar
1 (8 oz.) pkg. cream cheese, softened
3 tbsp. butter or margarine, softened
1 tsp. vanilla

TO PREPARE THE CAKE:
Preheat oven to 350 degrees F. Grease and flour a 13x9-inch baking pan.

Mix apples and sugar together. Add oil, nuts, eggs and vanilla. Set aside.

Sift together flour, baking soda, cinnamon, and salt. Add to the apple mixture and mix BY HAND until blended. Turn into prepared pan.

Bake at 350 degrees for 1 hour or until cake starts to shrink from sides of pan. Cool in pan on rack. Frost cooled cake with Cream Cheese Frosting.

TO PREPARE THE CREAM CHEESE FROSTING:
Beat frosting ingredients together until light and fluffy with beater. Put on cooled cake and refrigerate.
