Recipe: DEEP-FRY 'VEGGIE' BATTER

Hi Sharon,
I know you asked for a "coating", but thought I'd pass this recipe on as it is a family favorite, and REALLY sticks...It is from "The Great American Brand Name Recipes Cookbook"...
P.S. I mostly use this for onion rings, but have used it too with zucchini cut lengthwise strips..it's wonderful
DEEP FRY 'VEGGIE' BATTER
Batter:
3/4 cup all purpose flour
1/2 cup water
1/2 cup milk
6 tbsp. white cornmeal (I use "self-rising")
1 tablespoon crisco oil
3/4 tsp. seasoned salt
1/2 tsp. sugar
5 or 6 drops hot red pepper sauce
Crisco oil for frying
If using onions----l large onion, cut into 1/2" slices and separated into rings
Method:
Combine all batter ingredients in small mixing bowl. Stir until smooth.
Heat 2 to 3 inches Crisco Oil in deep fryer or large saucepan to 375 degrees. Dip a few onions in batter. Let excess batter drip back into bowl. Fry a few at a time 2 or 3 minutes or until brown. drain on paper towels. Repeat with remaining batter. Serve immediately or keep warm in 175 degree oven. 4-6 servings...
Sharon, I have also used this batter for shrimp, adding a few shakes of cayenne and about 2 tbsp. cornstarch...
