DELICIOUS FRIED CHICKEN STRIPS
Servings: 6
Six large, boned, skinned, chicken breasts
2 eggs, beaten
Cracker Crumb Breading (recipe below)
Salt and pepper
Vegetable oil for frying
Wash chicken breasts and slice each into 4 or 5 lengthwise strips. Pat chicken strips as dry as possible with paper towels.
Place beaten egg in a wide shallow bowl.
Prepare Cracker Crumb Breading and place in another shallow bowl.
Place each chicken strip into the egg wash and then into the breading mix, coating well. Place them onto a large plate.
In a large frying pan, place enough oil for frying. When the oil is hot, add the strips and cook for ONLY 3 minutes on each side*. If you cook them longer they will be dry and tough. As they get done, remove from pan and place on paper towels to absorb excess oil.
To keep warm, place in a 150 degree oven while you finish cooking the rest.
*You will probably have to add oil to the pan about halfway through the frying process.

2 Cups coarsely crushed cracker crumbs (if you crush them too fine the strips will not have that nice crunch)
2 Cups all purpose flour
Salt and pepper to taste
Note:
This craacker meal is great as a breading for pork chops, chicken parmesan, and veal cutlets, as well as chicken strips.
If you have a large family you may want to make a gallon container of it to keep on hand ready to use. It will stay fresh for months if it has a lid on it.
