Recipe: Depression Day Donuts (using mashed potatoes)

Breakfast and Brunch
DEPRESSION DAY DONUTS

3 tbsp. Snowdrift or other shortening
2 1/2 cups all-purpose flour
1 1/2 tsp. mace or nutmeg
3 egg yolks
3/4 cup sugar
1 cup mashed Irish potatoes
3 tsp. baking powder
1/2 tsp. salt
1 egg white

Beat all ingredients together. Knead lightly on dough board.

Roll, cut and add to hot oil (350 degree). Brown on both sides and cool.

Roll in powdered sugar.
