Recipe(tried): Diana........Chicken Meatballs at last!!

Here,s the recipe

CHICKEN MEATBALLS with SPAGETTI
********************************
1 Ib minced chicken
1 /3 cup grated parmesan
2 cups fresh breadcrumbs
2 cloves garlic crushed
1 egg
freshly ground pepper
1 Tbls flat leaf parsley
1 Tbls chopped fresh sage
3 Tbls olive oil

TOMATOE SAUCE

1 tBLS OLIVE OIL
1 onion chopped
4 Lbs ripe tomatoes,peeled,seeded and chopped
3 cloves garlic crushed
2 bay leaves
1 cup basil leaves
1/2 tsp sugar
1 tsp freshly ground pepper1 Lb spagetti

Meatballs

In a bowl mix together
mince
parmesan
breadcrumbs
egg
pepper
herbs

Shape into small balls and chill for 30 mins to firm up
Heat oil in a pan and shallow fry the balls in batches til golden brown.Drain
to absorb oil.

Sauce

Saute onion and garlic in oil til just soft and add chopped tomatoes,sugar and
bayleaves,cover bring to boil,reduce heat and simmer for about 50 mins
(**make sauce before meatballs**)

Add meatballs basil leaves(torn finely) and pepper to tomatoe sauce and simmer
gently for another 10 mins til heated through.
Cook spagetti whilst reheating meatballs in sauce so it should all be ready
together.
Serve with extra parmesan in a bowl.

The sauce is very versatile and forms the basis for all my toamatoe sauces for
pasta.I often make a big batch and freeze,oh and you can puree it as well just
remember to take the bay leaves out!!!!
