Recipe(tried): Pineapple Ice Box Cake (using ladyfingers)

This is delicious so try replacing pineapple with Lemon

PINEAPPLE ICE BOX CAKE

1/4 cup sugar
2 tablespoons water
2 egg yolks, beaten
1/2 cup butter, softened
1 cup confectioners' sugar
1/2 cup drained, crushed pineapple
2 (pasteurized) egg whites, beaten
1 teaspoon vanilla
Ladyfingers, split
Whipped cream (for garnish)

Dissolve sugar in 2 tablespoons water in top of double boiler. Gradually add egg yolks, heating and stirring until thick and smooth. Cool.

Cream butter and confectioners' sugar together. Add to cooled mixture. Add pineapple. Fold in beaten egg whites with vanilla.

Pour into pan lined with split ladyfingers. Cover with split ladyfingers. Refrigerate 12 hours.

Slice and garnish with whipped cream.

Serves 6 to 8.
