Diet Coke Cake
alt.support.diet.weightwatchers/Shannon Orand (2002)
1 box (2 layer) cake mix*
1 (12 oz) can of soda (Coca-Cola or any other flavor)**
NOTHING ELSE!!!
Mix the cake mix and soda together and bake as directed on package
If you use diet soda, use the nutritional label on the cake mix for points (just the mix, not "as prepared" because you are not adding the eggs and the oil). For example, Betty Crocker Sweet Rewards choc cake mix and one can of Faygo Black Cherry soda makes one 13x9-inch cake, 15 pieces, 2 pts each. (that's regular soda, not diet). You really don't save any pts using diet. One can of soda is 150 calories, divided by 15 pieces is only 10 calories more or less per piece.
If you make 12 cupcakes then it's 3 points per cupcake.
If you make 24 then it would be 1.5 points per cupcake
To keep cake from crumbling:
- Use 10 oz. of soda instead of 12.
- Or, I use the reduced fat cake mixes from Betty Crocker and add all 12 oz. of soda and they stay together.
I top with fat free cool whip and put in fridge. It doesn't last long.
