Double-Tomato Sauce Mix

1 cup sundried tomatoes (2 oz/50 g)
2 tbsp dried parsley
1 tbsp dried basil
2 tsp dried marjoram
1/2 tsp hot pepper flakes

With scissors, sliver tomatoes; combine in airtight container with spices.

Makes about 1 cup

To prepare Double-Tomato Sauce

In 2 tbsp olive oil, cook 1 chopped onion and 2 minced garlic cloves over medium heat until softened, about 3 minutes. Add 1/2 cup Mix and 1 can (19 oz/540 mL) tomatoes, breaking up tomatoes; simmer for 15 minutes or until thickened. Season with salt and pepper to taste.

Makes 3 cups, enough for 4 servings
