Recipe(tried): Dried Cherry Fruitcake

I promised that I would post this if I ever found it - and I just did - while looking for something else entirely (which I didn't locate)

Dried Cherry Fruitcake

This recipe makes 6 small or 3 large loaves
It is not as sweet as traditional fruitcake - I am going to try "seasoning" it with brandy next year

350 degrees for 45 min to 1 hour

1 lb butter or margarine melted
1 1/2 c sugar
8 eggs
1/2 tsp salt
peel of one lemon grated
2 1/2 c cake flour
1 1/2 tsp baking powder
10 oz dried cherries (not candied)
1 c sparkling wine or white wine
1 c brandy
10 oz walnuts
1 1/4 lb pecans
10 oz golden raisins
14 oz dried pineapple (not candied)

Plump the cherries by simmering with the brandy and wine on low heat until liquid is almost absorbed. Beat together the butter, sugar, eggs, salt and lemon peel

combine the flour and baking powder and stir in. Stir in the cherries and any residual liquid, add nuts, pineapple (cut into chunks) and raisins.

Divide into pans that are greased and lined with waxed paper and greased again.
