Here are some recipes:
Sun-dried Tomato Dip
1 3-oz. package sun-dried tomatoes, packed without oil
1/3 fresh basil leaves (do not substitute dried basil)
2 tablespoons balsamic vinegar
2 tablespoons Italian-style tomato paste
1 tablespoon olive oil
1/8 teaspoon salt
1/8 teaspoon pepper
1 15-oz. can white beans, drained
1 garlic clove, minced
Pita chips or baked tortilla chips (optional)
Combine tomatoes and one cup boiling water in a bowl; let stand 15 minutes or until soft. Drain tomatoes in a sieve over a bowl, reserving 1/2 cup soaking liquid.
Place tomatoes, reserved soaking liquid, basil, and remaining ingredients in a food processor; process until smooth. Serve with pita chips or baked tortilla chips, if desired. Yield: 2 1/2 cups (serving size: one tablespoon).

Dried Tomatoes with..Red Potatoes
New Red Potatoes- cut in chunks (figure 1 or 2 per person)
Olive Oil- Pour some in a bowl, add potatoes, stir to coat.
Roast in Hot oven...(450) Till brown and crispy- Stirring occasionally
Have ready :
Garlic - a handful, minced ( literally)
Dried Tomatoes - crumbled
Fresh Basil- chopped
Instructions: Stir all of this into hot potatoes the moment they come from the oven. Mix well. Serve hot or at room temperature. (Tomatoes will remain a little chewy - its a good contrast of textures.

Dried Tomato Soup
20-25 slices of Dried tomatoes(or 3/4 cup crumble Tomatoes)
1 cup Chicken Broth
Salt/Pepper to taste
1 garlic clove
1 green onion (sliced)
1 table spoon Extra Virgin Olive oil
Red Chili Pepper Flakes to taste
Instructions: Add everything except the Olive oil to a sauce pan, all at once. Bring to a boil and simmer for about 1 minute. Remove from the heat and let stand for a couple minutes. Pour into warm soup bowl and spoon the Extra Virgin Olive oil over the soup and serve. (serves one. For more just multiply it times the number of people being
served.)

Mayonnaise
Lemon Juice
Fresh Chives
Just Tomatoes -crumbled
Pepper
Instructions: All to taste. Blend well and Refrigerate

Dried herbs, dried garlic, or dried tomatoes can be used to flavor oils without safety concerns because there is not enough moisture available for bacteria growth. However, if you
add a combination of fresh and dried items to the oil, it must be refrigerated.
