Recipe: Easy Divinity (using fluffy white frosting mix)

EASY DIVINITY

1 (7.2 oz.) pkg. Betty Crocker Fluffy White Frosting Mix
1/3 cup llight corn syrup
1 tsp. vanilla
1/2 cup boiling water
1 (16 oz.) pkg. powdered sugar
1 cup chopped nuts (pecans)

In large bowl of electric stand mixer,* beat frosting mix (dry), boiling water, corn syrup, and vanilla on low speed until blended. Beat on high speed about 5 minutes or until stiff peaks form.

Gradually beat in powdered sugar on low speed until blended.

Stir in nuts.

Drop mixture by teaspoonfuls onto waxed paper. Let stand about 4 hours until firm. Turn candies over. Dry at least 12 hours.

Store in airtight container.

Because mixture is extremely stiff, use only countertop (not hand) electric mixer.

Makes 5-6 dozen candies
