Recipe: Easy Microwave Candies (11)

Desserts - Candy, Chocolate
Here are a bunch of microwavable candy recipes. Some of them are easier than others. I've found that kids really enjoy the Chocolate Covered Marshmallows, and they are super-easy to make. I hope these help.

Cocoa Bites

- 6 tablespoons butter or margarine
- 3 cups miniature marshmallows or 30 large marshmallows
- 1 2/3 cups (10 oz package) Reese's Peanut Butter Chips
- 1/3 cup Hershey's Cocoa
- 1/3 cup light corn syrup
- 5 cups crisp rice cereal

Place butter in large microwave-safe bowl. Microwave at high (100%) 45 seconds or until melted. Add marshmallows, peanut butter chips and cocoa; stir. Microwave at high 1 1/2 minutes; stir until mixture is smooth. Stir in corn syrup. Add cereal; stir until well coated. Shape as directed above.

Candy Bar Fudge Bites

- 1 (6-oz) package semi-sweet chocolate chips
- 1 can store-bought chocolate fudge frosting
- 1 cup butterscotch chips
- 2 1/2 large candy bars, any flavor and cut up (Snickers works well)

Line 8" square pan with foil, extending over edges; lightly butter foil and set aside. In large microwave- safe bowl, combine both flavored chips; microwave on medium for 1 to 2 minutes or until chips are melted. Stir until smooth. Stir in frosting and pieces from about 2 candy bars until mixed. Spread in foil-lined pan; sprinkle with rest of candy bar. Refrigerate 1 hour or until firm. Remove fudge by lifting foil from fudge. Cut into bite-sized squares.

Chocolate Covered Marshmallows

- 1 cup chocolate chips
- 1/2 cup shortening
- 1 (10 oz) package marshmallows
- 50 toothpicks

Place chocolate chips and shortening in 2 cup measuring bowl. Microwave at medium 1 to 3 minutes or until chips are shiny and soft. Stir until smooth. Insert toothpick in top of each marshmallow. Dip into chocolate to cover completely. Set on wax paper. Let stand until firm.

Easy Crunchy Clusters

- 1 bag (10 oz ) peanut butter chips, melted
- 3 1/2 tablespoons margarine, melted
- 4 cups corn flakes
- 1 bag Snickers Brand Miniatures, chopped into small pieces

Place peanut butter chips and margarine in a microwave-safe bowl. Heat at medium power for about 1 minute and 20 seconds. Stir until smooth, then stir in corn flakes and chopped Snickers Brand Miniatures. Drop into mounds and place on a sheet pan lined with wax paper. Let set for about 1 hour.

Flipz Clusters

- 2 cups (12 oz package) Nestle Toll House Semi-Sweet Chocolate Morsels
- 1/2 cup creamy peanut butter
- 4 cups miniature marshmallows
- 1 package (7.5 oz) White Fudge Crunchy Graham Nestle Flipz

Line two large trays or baking sheets with waxed paper. Microwave morsels and peanut butter in large, microwave-safe bowl on high (100%) power for 2 minutes; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth. Cool, stirring occasionally, for 10 to 12 minutes. Add marshmallows; stir to coat. Gently stir in Flipz until combined. Drop by heaping tablespoon onto prepared trays. Refrigerate until firm.

Nutty Chocolate Marshmallow Puffs

- 2 cups milk chocolate chips
- 1 (14 oz) can sweetened condensed milk
- 1 (7 oz) jar marshmallow cream
- 40 large marshmallows
- 4 cups pecans, coarsely chopped

In microwave-safe bowl, combine chocolate chips, milk and marshmallow cream. Heat just until melted. Stir until smooth, mixture will be thick. Immediately dip marsh-mallows, 1 at a time, into chocolate mixture. Shake off excess chocolate. Quickly roll in pecans. Place on waxed paper lined baking sheets. Reheat chocolate mixture, if necessary, for easier coating. Chill until firm. Store in refrigerator in airtight container.

Peanut Butter and Milk Chocolate Chip Clusters

- 1 3/4 cups (11 oz package) Reese's Peanut Butter and Milk Chocolate Chips
- 2 teaspoons shortening (do not use butter, margarine, spread or oil)
- 2 cups peanuts

Place chips and shortening in medium microwave-safe bowl. Microwave at high (100%) 1 minute; stir. If necessary, microwave at high an additional 15 seconds at a time, stirring after each heating, just until chips are melted and mixture is smooth when stirred. Stir in peanuts. Spoon heaping teaspoons of peanut mixture into 1" paper candy cups or paper-lined muffin cups. Refrigerate 1 hour or until firm. Store tightly covered in refrigerator. About 2 1/2 dozen candies.

Peanut Butterscotch Crispies

- 1 2/3 cups (11 oz package) Nestle Toll House Butterscotch Flavored Morsels
- 1/4 cup peanut butter
- 3 cups corn flakes
- 1/2 cup raisins (optional)

Microwave morsels and peanut butter in medium, microwave-safe bowl on medium-high (70%) power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth. Stir in corn flakes and raisins. Drop by rounded tablespoon onto waxed paper-lined baking sheets. Chill for 20 minutes or until set. Store in airtight container.

Peanutty Caramel Chews

- 1 (14 oz) package caramels
- 1/4 cup cold water
- 3/4 cup peanut butter, divided
- 4 cups corn flakes
- 4 squares (1 oz each) semi-sweet chocolate
- 2 tablespoons butter

In microwave-safe bowl, combine caramels, water and 1/2 cup peanut butter. Microwave for 4 to 6 minutes, or until smooth, stirring every 2 minutes. Stir in cereal. Press into greased 9" square pan. In microwave-safe bowl, combine chocolate, remaining peanut butter and butter. Microwave for 2 to 3 minutes, or until chocolate is almost melted, stirring halfway through heating time. Stir until completely melted. Spread evenly over bars. Chill until chocolate is set. Cut into squares.

Rocky Road Clusters

- 2 cups (12 oz package) Nestle Toll House Semi-Sweet Chocolate Morsels
- 1 1/4 cups (14 oz can) Nestle Carnation Sweetened Condensed Milk
- 2 1/2 cups miniature marshmallows
- 1 cup coarsely chopped nuts
- 1 teaspoon vanilla extract

Line baking sheets with wax paper. Combine morsels and sweetened condensed milk in large, microwave-safe bowl. Microwave on high (100%) power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth. Stir in marshmallows, nuts and vanilla extract. Drop by heaping tablespoon in mounds onto prepared baking sheets. Refrigerate until firm.

White-Chocolate Peanut Butter Crunch

- 8 (2 oz) vanilla bark coating squares
- 2 tablespoons creamy peanut butter
- 2 cups miniature marshmallows
- 2 cup crisp rice cereal
- 2 cups dry-roasted peanuts

Microwave coating in a large glass bowl at high 2 minutes or until melted, stirring every 30 seconds. Stir in peanut butter until smooth. Stir in marshmallows, cereal and peanuts. Drop by teaspoonfuls onto wax paper. Let stand 15 minutes or until firm.
