EASY TACOS
1 pound lean ground beef
1 large onion, chopped (about 1 cup)
1 envelope (about 1 1/4 ounces) taco seasoning mix
1 cup water
1 package (about 12 ounces) tortilla chips
1/2 head lettuce, shredded
2 medium tomatoes, chopped (about 2 cups)
1 can (2 1/4 ounces) sliced ripe olives, drained
1 cup shredded Cheddar or Monterey Jack cheese (4 ounces)
2/3 cup reduced-calorie sour cream
Cook ground beef and onion in 10- inch skillet, stirring occasionally, until beef is brown; drain.
Stir in the seasoning mix (dry) and water. Heat to boiling; reduce heat. Simmer uncovered 10 minutes, stirring occasionally. Spoon beef mixture onto chips. To with remaining ingredients.
TO COOK IN A MICROWAVE:
Crumble ground beef into 2.quart microwavable casserole. Add onion. Cover loosely and microwave on high 5 to 8 minutes, breaking up beef and stirring after 3 minutes, until very little pink remains in beef; drain. Stir in seasoning mix (dry) and 3/4 cup water. Microwave uncovered on high 5 to 8 minutes, stirring after 3 minutes, until hot. Continue as directed.
