Recipe(tried): Eggplant Spread and Ideas for at home Wedding Reception

Good Morning. First of all let me express my good wishes to you & your future husband. Good luck to both of you.
Christina, My culinary imagination tells me the following. If guests are coming over at 7:00 P.M. you can safely assume they have already dined earlier. So do not count on having much food out on your party table. I am going to post one very easy dish to make Trust me it's CHEAP to make.
APPETIZER: EGGPLANT SPREAD
1 eggplant (approx 3/4 pound)
1/2 of a medium onion (peeled & diced fine)
2 medium to large garlic cloves minced
1 tbsp lemon juice
1 tbsp olive oil
1 tsp oregano (or any dried herb of your choice
salt & pepper to taste
2 tbsp of dried parsley
Bake eggplant at 350 degrees in a pre-heated oven for 30/35 minutes. Peel and dice eggplant.
Place eggplant and remaining ingredients into a food processor with a steel blade and process away.
Chill till ready to serve. Serve with saltine type of crackers or the like.
Christina I would make 3 times this amount. LEFTOVERS are excellent for a lite lunch next day.
Other considerations are:
- Small cocktail franks that you can cut-up slivers of deli cheese and wrap around the franks with colored foil tooth-picks and serve with cocktail rye bread. This bread can be purchased in your local deli or supermarket.
- Make some potato salad this forum has many recipes for that. Try to make it simple. Find one with-out hard-boiled eggs.
- Get deli sliced meats like turkey & ham. Quarter the slices so they can fit on the cocktail rye and or the saltines. Have lettuce, thin sliced tomatoes, and sliced pickles along with mustard and mayo as well.
