Recipe: Mediterranean Chicken (Heinz Ketchup, 1988)

MEDITERRANEAN CHICKEN

2 to 2 1/2 pounds broiler-fryer pieces
1 tablespoon vegetable oil
1 medium onion, sliced
1/2 cup chopped celery
1 clove garlic, minced
1 cup Heinz Tomato Ketchup
1 cup water
2 tablespoons dry red wine (optional)
1 bay leaf
1/2 teaspoon dried Italian seasoning
1/4 teaspoon salt
1/4 teaspoon pepper
Hot cooked pasta or noodles (for serving)

In large skillet, brown chicken well in oil; remove. Drain drippings, reserving 1 tablespoon.

Saute onion, celery and garlic in reserved drippings until onion is tender.

Stir in ketchup and next 6 ingredients. Add chicken; baste with sauce. Cover; simmer 35 to 45 minutes or until chicken is tender, basting occasionally. Remove bay leaf; skim excess fat from sauce. Thicken sauce with flour- water mixture, if desired.

Serve chicken and sauce with pasta or noodles.

Makes 4-5 servings
