Recipe: Elderberry Muffins (using honey)

ELDERBERRY MUFFINS

2/3 cup honey
1 egg
2 1/2 tablespoons shortening
3 cups flour
2 tsp. baking powder
pinch of salt
1 cup milk
1 cup elderberries

Preheat oven to 350 degrees F. Grease 12 muffin pan cups.

Cream together honey, egg, and shortening; set aside.

Sift together flour, baking powder, and salt.

Add milk to creamed mixture alternately with dry ingredients. Gently stir in elderberries. Pour into pour into prepared muffin cups.

Bake in 350 degree oven approximately 20 minutes.
