Recipe: Elegant Vegetables Di Saronno
Misc.Hi Tracy, here is a recipe that comes very close to what you want. It
does use zucchini in the recipe, but you can eliminate them and add
more carrots if you desire.

Title: Elegant Vegetables Di Saronno

Yield: 4 Servings
2 Green zucchini
3 Carrots
2 ts Butter
3 ts Di Saronno Amaretto
1/4 c Sliced almonds; toasted
Salt and pepper
Remove one-fourth inch off the ends of the zucchini.
Cut each zucchini into 4 strips lengthwise; remove
seeds and discard. Julienne zucchini. Peel carrots;
remove one-fourth inch off the ends; julienne. Saute
vegetables in butter and Amaretto until al dente. Toss
in almonds. Salt and pepper to taste.
