Recipe: Orange-Soy Glazed Salmon with Green Beans and Red Onion (serves 2)

1/2 cup orange juice
1/4 cup honey
1/4 cup soy sauce
2 tablespoons fresh lemon juice
1/2 teaspoon ground ginger
1 (26-ounce) salmon steaks, 1/2 inch thick
1/4 pound haricots verts (thin green beans), washed and trimmed
1 small red onion, thinly sliced
2 teaspoons light olive oil
In a baking dish, combine orange juice, honey, soy sauce, lemon juice and ginger. Add salmon steaks and turn to coat evenly with glaze. Let stand, covered, at room temperature 1 hour.
Gently toss haricots verts and onion with oil.
Preheat grill pan over medium heat.
Place salmon steaks on one side of grill pan and put haricots verts and onion on other side.
Using tongs, stir beans and onion frequently 4 minutes. Remove vegetables and transfer to warm plates.
Turn salmon, and grill 4 minutes more. Transfer salmon to warm plates and serve.
