English Toffee Brownies

These cookies are a recipe of my mother's and they have long been a favorite of my family - they are easy, simple, and delicious. I really don't know if there is really anything English about these or not, but regardless...they are great. Hope you enjoy them also.1 cup brown sugar (I use light)
1 cup unsalted butter
1 egg yolk (large size)
1 teaspoon vanilla extract (I dump in more though)
1/2 teaspoon salt
2 cups unbleached all-purpose flour
1/2 cup semi-sweet chocolate chips
1/2 cup finely chopped nuts (optional)
Cream the sugar and butter together and add the egg yolk and vanilla and mix until well blended. Add the flour and mix until just blended. Do not overmix at this point.
Spread cookie dough onto an UNBUTTERED baking sheet to about 1/8" thickness. Bake 350 degrees F for about 30 minutes. Remove from oven and immediately sprinkle with semi-sweet chocolate chips. After about 1 minute spread the chocolate evenly over the cookie dough. Keep spreading until all the chips have completely melted and are evenly spread over the dough. Sprinkle with finely chopped nuts and cut into squares immediately for once it cools it will be too hard to cut.
Store in airtight container.
