HUMMINGBIRD CAKE
3 cups all- purpose flour
2 cups sugar
1 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
1 1/2 cups Crisco Vegetable Oil
1 1/2 tsp. vanilla
2 cups chopped bananas
2 cups nuts, chopped
1 (8 oz.) can crushed pineapple with juice
3 eggs, beaten
Cream Cheese Frosting (recipe follows)
Grease and flour a tube pan or 3 (9-inch) layer cake pans.
Sift together flour, sugar, baking soda, salt and cinnamon. Stir in remaining ingredients for the cake batter but do not beat. Place in prepared pan(s).
Bake in a 350 degree F oven for 1 hour and 15 minutes for a tube pan or 25-30 minutes for layer cake pans. Cool than frost.
CREAM CHEESE FROSTING
1 (8 oz.) package cream cheese, softened
1/2 cup butter or margarine, softened
1 (1 lb.) box confectioners sugar
1 tsp. vanilla
1/2 cup pecans, chopped
Mix together and frost cooled cake.
