Good morning. Sandy I stongly suspect the sugar. Of course there are other reasons as well & I am familiar with them. I will state an option for you. Bake again but this time place the sugar in your food processor or your blender & grind it for 40 seconds. You see Sandy, if the sugar doesn't fully melt you will sustain a collapsed cake. By grinding same the diameter of the granules become smaller & melts easier. Have you changed brands lately???.
The other option is just post your recipe & directions & I will scrutinize it to see if it is properly balanced.
