I have been thinking about Easter being early this year, and I know - I'm rushing it, but I love cooking Easter dinner. So many pretty, bright spring-type things to have.
I always make my grandmother's old family recipe for pickled beets and do a salad using them. This recipe has to be 90 years old at least. Ran across it today while searching for another recipe.
GRANDMA'S PICKLED BEETS
2 cans of baby whole beets, drained (or if you can't find baby whole, get regular and cut into quarters)
1/2 cup white vinegar
1/4 cup salad oil
1 tsp. salt
4 packed Tbsp. brown sugar
Place everything into canning jar with lid, or other plastic container with cover and shake well - then refrigerate for several days, shaking well a few times a day.
Ready to eat in a few days but will stay longer and taste even better.
These are really pretty and so colorful on a bed of red lettuce leaf, a sliced hard-boiled egg that has also been pickled in the same pickling juice to dye the whites, then top with crumbled goat cheese and some of the sugared pecans, almonds or walnuts you can get in the little packets. Use any light sweet & sour, poppy seed or asian type dressings.
