Recipe(tried): Faux Chicken Cordon Bleu

This is super-easy, impressive, and because it's white meat chicken it cooks fairly quickly.

Faux Chicken Cordon Bleu

INGREDIENTS:
4 boneless, skinless chicken breasts
4 long slices of boild ham
4 long slices of swiss cheese
1 ripe medium-sized tomato (sliced)
approx. 4 tsp. dried rubbed sage
1 bag of unseasoned stuffing
salt & pepper to taste
approx. 3 Tbsp. garlic butter (melted)

DIRECTIONS:
Pound the chicken breasts to approximately 1/4 inch thick. On each chicken breast place a slice of ham, then a slice of cheese, two tomato slices and approximately a teaspoon of sage. Season with salt and pepper and roll the chicken breast up like a jelly roll. Place the rolled chicken breasts in a pan so that they fit snugly together. (If you can't do that, you can use a toothpick through each breast to keep it rolled.) Pour the unseasoned stuffing over the rolled breasts to cover. Drizzle the garlic butter over the stuffing. (Some people add some chardonnay to the garlic butter before pouring it over the stuffing) Bake at 350 F. for approximately 20 minutes or until the cheese is bubbling out of the breasts and the topping is crispy.
